Cherry tomatoes, pine nuts and mozzarella salad



Cherry tomatoes

Mozzarella pearls

Toasted pine nuts 

Chopped parsley

Olive oil

lemon juice

salt and pepper


1. Mix olive oil, lemon juice, salt and pepper in a bowl and marinate the mozzarella pearls for at least two hours (or over night).

2. Cut cherry tomatoes in half and add to the bowl.

3. Add the chopped parsley and toasted pine nuts.

4. Mix well and voila!
