Hearty salad - Artichoke hearts and eggs




This salad can replace a whole meal!
It came to happen when I found myself making too many hard-boiled eggs and really needed to finish the artichoke hearts can that was sitting in the fridge. 

2 hard-boiled eggs

4-5 marinated (pickled) artichoke hearts

1 whole red pepper (big)

1/4 cup chopped scallions (green onions)

2 Tsp. olive oil

Salt and Pepper to taste



1. Cut the eggs (any size any way you'd like).

2. cut the red pepper to small pieces.

3. Cut the artichoke hearts (again- as you wish)

4. Add the scallions, the salt and pepper and olive oil.

5. Mix well and serve.
