Spinach- Feta Burekas





1 pack of puff pastry squares

1 bunch of fresh spinach

1 pack frozen spinach (can be replaced with fresh) - thawed

1 large onion (any)

2 Tsp. olive oil

1 1/2 cups of feta cheese (crumbled)

2 large eggs

salt and pepper to taste

1 egg, beaten, to brush the burekas before baking
sesame seeds



1. Add olive oil to large skillet  and saute the onions until they become transparent. Move to a bowl and let cool.

2. In the same skillet, put the fresh spinach and cook for 2-3 minutes in low heat. This process is called "sweating"- the spinach is sweating all its liquids and losing its crispiness. Move to the onion bowl.

3. drain the water from the thawed frozen spinach and add to the bowl with the onions and cooked spinach.

4. To the bowl: add the eggs and feta cheese. Mix well. Taste and add salt if needed. Add some pepper and taste again.

5. In a middle of a puff pastry square place 1 tsp. of the mix. Fold the sides and tighten well.

6. Brush egg on the pastry and sprinkle with sesame seeds.

7. Bake in a 360 degrees oven until golden brown. Check the bottom of the pastries, it should be brown as well when it's done.
